2 Eggs

1 cup almond or coconut milk

1 cup almond flour

1/2 cup coconut flour

1/2 tsp salt

1/2 tsp baking soda

2 Tbsp cinnamon

1 cup coconut sugar

5 Tbsp coconut oil

1 cup any nut of choosing crushed (optional)


Heat oven to 350 degrees

Mix together all flour, 1/4 cup coconut sugar, baking soda and salt and set aside.
In separate bowl mix together eggs, milk and 3 tbsp coconut oil.
Add wet ingredients to dry and mix until dry ingredients are just wet.
In separate bowl mix 3/4 cup coconut sugar and cinnamon then add in remaining coconut oil and mix together.
Add half of sugar mixture to muffin batter and fold in.
Scoop batter into muffin tins and then sprinkle remaining sugar mixture on top and press down with spoon (sprinkle nuts on top as well if using them)

Bake for 20-22 minutes

A sweet grain free, low sugar treat for anyone to enjoy!
